The Stages of Coffee Production

A coffee factory isn't just a single building; it represents the collective stages of processing coffee beans from the harvested cherries. These steps, crucial to the final quality and flavor profile, are often broken down into these key areas:

1. Receiving and Sorting:

The process begins with the arrival of coffee cherries from farms. These cherries are carefully inspected, and any underripe, overripe, or damaged cherries are removed. This initial sorting stage lays the foundation for consistent quality.

2. Processing:

This is where the coffee cherries transform into the beans we know. There are primarily two methods:

  • Washed Process: This method involves removing the pulp and mucilage from the cherry, typically using water. This process results in a cleaner, brighter cup.
  • Natural/Dry Process: Here, the cherries are dried whole, with the pulp still attached. This process retains more body and sweetness in the final product.

The choice of processing method significantly influences the coffee's characteristics.

3. Drying:

Whether washed or naturally processed, the beans must be dried to reduce their moisture content. This can be done using sun drying (traditional method) or mechanical dryers (faster and more controlled). Proper drying is critical to prevent defects and ensure long-term quality.

4. Hulling and Milling:

Once dried, the beans undergo hulling—the removal of the parchment layer surrounding the bean. Subsequently, milling removes the remaining silverskin, resulting in the green coffee beans ready for export.

5. Grading and Sorting:

Before the beans are bagged for export, they are meticulously graded and sorted according to size, density, and defects. This ensures consistency and quality control.

6. Export and Storage:

Finally, the green coffee beans are packed and exported to roasters around the world. Proper storage is crucial to maintain the bean's quality until they reach their destination.
