  • Vegetables: The beauty of chopsuey lies in its adaptability. Feel free to use whatever vegetables you have on hand! A classic combination might include:
    • 1 cup broccoli florets
    • 1 cup sliced carrots
    • 1 cup sliced bell peppers (any color)
    • 1/2 cup sliced mushrooms
    • 1/2 cup snow peas
    • 1 small onion, sliced
  • Protein (Optional): Add protein for a heartier meal. Options include:
    • 1 cup cooked chicken, diced
    • 1 cup cooked shrimp, peeled and deveined
    • 1 cup firm tofu, cubed
  • Sauce:
    • 1/4 cup soy sauce
    • 2 tablespoons oyster sauce (optional, but adds depth of flavor)
    • 1 tablespoon cornstarch
    • 1 tablespoon water
    • 1 tablespoon rice vinegar
    • 1 teaspoon sesame oil
    • 1 teaspoon sugar
  • Other:
    • 2 tablespoons vegetable oil
    • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables: Wash and chop all vegetables into bite-sized pieces. Ensure that the pieces are relatively uniform in size for even cooking.

  2. Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce (if using), cornstarch, water, rice vinegar, sesame oil, and sugar. Set aside.

  3. Stir-fry: Heat vegetable oil in a wok or large skillet over medium-high heat. Add the onion and stir-fry for about 2 minutes until softened.

  4. Add Vegetables and Protein: Add the harder vegetables (carrots, broccoli) first, followed by the softer ones (bell peppers, mushrooms, snow peas). Stir-fry for 5-7 minutes, until the vegetables are crisp-tender. If using protein, add it along with the harder vegetables.

  5. Add Sauce: Pour the sauce over the vegetables and protein. Stir-fry for another 1-2 minutes, until the sauce thickens and coats the ingredients evenly.
